Our founders spent years traveling to high-altitude farms, learning the delicate art of cultivation and the profound impact of careful roasting. Those lessons came home to our Maadi roastery, where small batches are roasted weekly and delivered to every branch the next morning.
The kitchen follows the same rule: slow-fermented dough, produce picked up from the market each morning, and pastries baked in waves through the day so nothing reaches your table stale.
